Probably about 12, 15 years ago I first started getting into the plant-based community and kind of been one foot in, one foot out, one foot in, one foot out for a number of years.

Finally, I just knew through some various health stuff that no one can figure out or want to deal with, for that matter, around here, that I needed to do something for myself, and I've always known plant-based was the solution because I've gotten results in the past from other health related issues.

So I just got to a point where I said, all right, I'm doing this myself, I've got to get reeducated, just kind of get remotivated and refocused, and then kind of sparked my most recent decision.

When I was around like-minded people and I had people in my life who not only ate the same way but even supported it, even if I didn't, that made a huge difference for me because it was a no-brainer.

So when you find yourself at a place where you need that support, you got to find it somewhere if you're determined to stay on it, I think especially at the beginning until you grow some really strong roots for yourself.

I had learned a lot the first time when I went plant based when, I lived in a different state and I was previously married.

We he had been a former chef, so it was just like our house was like a really let's experiment, let's make it complicated, gastronomy kind of stuff, and it was just like exhausting but fun.

And I'm at a place where I am now where I'm like that's just all too complicated.

Right, I mean, even when I was on my own for a little while, I'd come home from work and I never had anything non-plant based.

And so that was kind of where I had my foot in both worlds at one time and there really wasn't much of a benefit because one greatly offset the other and sadly enough you know it would didn't do much of the other stuff to keep you stagnant with your health and your weight goals.

I remember Jared and I were out one time when we've heard this multiple time people spending hours and hours in the kitchen.

What do you think about that compared to not just what you were doing previously plant based but other ways, like the traditional ways that you used to cook before you went plant based?

Oh, definitely, first and foremost thing that comes to my mind is cleaner, but not just like the food itself, the mess that's left behind.

Right, and I tell you, I used to hate touching meat growing up, but you know we cooked it Right.

Yeah, splatters everywhere, you got grease on the stove Grease up here.

It leaves a smell in the house Like you have to go around and clean your house after you fix your food, and so not only is the food itself clean for your body and your health there, what's left behind is you take a paper towel, even if that will wipe something up, and throw it away or a rag spray down Like it's so easy.

I mean, you don't even it's not disinfecting like before you had like raw meat juice drip and somewhere and that kind of stuff just really.

So the first thing is that it's a lot cleaner, but the second is it's a lot simpler.

And with the recipes you guys have in the cookbook, it really helps me stay focused on that, because I tend to having come from a more complex way of trying to put a meal together.
