In this episode, we are going to fundamentally restructure how you think about plants and whole food plant based eating. A question that we commonly get asked and that we commonly read is, is this way of eating boring? And I think the reason they asked this is because they have such a limited experience of eating plant foods. They may be thinking salad, or they talk about, oh, it's rabbit food, I'm just going to have lettuce and just maybe have some tomatoes. And that's about it.

Well, maybe that's the only thing you can think of. I mean, for us when we ate that way, I think we were so limited our understanding of what was there because we'd have those same vegetables over and over again, when we did have a vegetable on the side or with our meal. And we tried to do that because we were trying to be more healthy, at least with every meal have one vegetable, maybe two, but they were smaller portions usually. And they just weren't a variety because we didn't know what variety to draw on. We saw those main things that we've gravitated towards, like in the greens category would be a lettuce. Maybe we go wild instead of Iceberg lettuce would be a romaine, yeah, romaine or sometimes even a red leaf lettuce or something like that. But you kind of think about all the different things in that one category, just in the category alone of the leafy greens. I mean, there's so much there. It's amazing. And so even within, let's think about cruciferous for a minute. So what do people usually think of when they think of cruciferous vegetables? Broccoli?

But with cruciferous, you have broccoli, brussel sprouts, bok choy, cabbage, cauliflower, and the list goes on.

And kale is actually even a cruciferous.

kale is a cruciferous and even within the cabbages, you have different colors of cabbage, different types of cabbages, and then let's talk about beans. Well, legumes beans fall under the category of land games, where you would also have peas and lentils, right?

Okay, so let's talk about beans. People think about pinto beans. But there's so many types of beans. I mean, you've got black beans and cannelini beans and edamame and fava beans, lima beans, mung beans, navy beans. I mean, I could go on and on and on. And it's a shame that there are all these amazing, delicious, wonderful foods out there just waiting for you to discover. And we settle for the few that we know. And that were... because they're familiar. They're comfortable.

Well, and I think that they're also not aware, because we've said this many times, you don't know what you don't know.

And once you do, a whole world opens up for you. Now, to compare. When you look at things like meat, eggs, dairy, there's not a lot of variety there. And you have most people - chicken egg. Now there if you're getting a little exotic, you might go a quail egg or a duck egg. But for a chicken egg, you might fry it, you might scramble it, but for the most part, it still tastes like an egg. For meat, beef is beef, chicken is chicken. So what makes a difference in those, it's the the flavors you add to it. But with with in the plant realm, you have tons of varieties within each different category.

And when those varieties come different flavors built in.

It's not just about the flavors you're adding. We're going to talk about that. How do you get those same flavors but some of it is even within that category of beans like we talked about a black bean tastes a lot different than a garbanzo bean taste a lot different than at a mom a taste a lot different than a fava bean. So you have built in these incredible flavors that are waiting for you to discover and enjoy. And once you start enjoying them, your taste buds will actually change. You'll pick up on flavors You didn't even know existed before. And then all of a sudden your body's fueled well and you're curious writing those things, those are the foods you'll start to think about. Those are the foods you'll start to crave. And you will not crave them in the same way that you crave junk foods or you crave animal products, they have a hold on you there are physical responses that your body has, that are not good to those things that are actually addictive. Again, we'll be talking about some of those things with you. But what you need to know is you'll crave those things because your body, it readjust things reset, your taste buds start to change.

And I think you will even surprise yourself, it will happen to you and you think, where did that come from? How did that happen? Well, wait a minute, I did not expect that.

It's one of the fantastic things because then you're starting to want the things that make you feel great, not just because I want to make myself eat those because they'll make me feel good. And then I'll and so then you're forcing yourself to eat healthy, no, then it becomes a this is what I really want. This is what I really enjoy. And you're at a whole new level, then. And it doesn't take long to get there. You'll be surprised how quickly that can happen. But surround yourself with people who are on the same journey. That's another thing.

It just changes everything for you. And if you don't have people in your home, they're doing that you can still do it, your life is your own. And there are ways you can do that and still make it work for you while honoring and caring for the other people around you as well.
