Okay, so I have this chili, this pot of chili that I made plant based.

It is so delicious and it's sitting in the fridge for a couple of days, right, so it's leftovers and I'm thinking, yeah, I don't really want to cook, I want something leftover.

So I'm looking there to see what I've got to throw together so I can make a microwave or Instant Pot potato like a baked potato.

Basically, right, I'm going to open it up, heat up my chili, put the chili on there and then put.

It's almost like a chili salad or a taco salad.

So I've got this loaded baked potato, but it's loaded down with greens, and I could even put corn, like I had some frozen corn.
